On a charming piazza presided over by an elm tree and a seventeenth-century church, tables in two of the three dining rooms overlook the scene, while the contemporary elegance of D’O unfolds inside. Chef Davide Oldani, now a defining figure of Italian cuisine, crafts dishes that distill twenty years of work and formative experiences, including memorable stints with Marchesi and Ducasse. Creative ideas rooted in Italian taste, impeccable technique, and presentations that are both essential and playfully pop: as exemplified by the Cuttlefish in its ink with pickled porcini and dill. Among the tasting menus, Molteplicità and Leggerezza (10 courses) represent the fullest expression of his creative freedom, while Esattezza revisits signature classics. Completing the experience is the brilliant sommelier Manuele, who delights with playful and surprising pairings.
