At the southernmost tip of Ortigia, steps from Castel Maniace, there is one of the most refined expressions of Syracusan gastronomy and, more broadly, one of the most fully realised interpretations of Sicilian culinary identity. Within the spaces of Palazzo Salomone Luxury Suites, Giuseppe Torrisi presents a creative and technical cuisine of almost baroque character, capable of combining intensity of flavour with elegance of execution, often to memorable effect. Particularly striking are the monkfish meunière with wild fennel and asparagus, and the “Assoluto di mandorla” (Made in Sicily), a curious and accomplished homage to the island, even reproduced in its shape. The wine list is broad and well structured: one may range across the interesting local productions, from Etna to the western coast, or entrust oneself to the expertise and discretion of sommelier Antonino, to explore a selection of international scope as well. Completing the experience is the pleasure of dining in the cool and relaxing outdoor terrace, amid soft lighting and gentle lounge music.
