The Sandoval brothers (with Mario in the kitchen, Diego at the head of the dining room and Rafael as sommelier) are, without a doubt, three great aces of Spanish hospitality. The magnificent restaurant, which covers an area of 1,100 m², elevates the experience by being laid out in stages that allow you to multiply the sensations, with stops at its colourful English-style bar, the small room dedicated to The Macallan whiskies, the spectacular wine cellar and, before moving on to the dining room, the kitchen for a final aperitif. Mario Sandoval, through his ‘Madrid’ menu (there is a vegan-vegetarian option) offers us a creative review of the cuisine of the Spanish capital but also, as they themselves say, of all that it can become. Fun fact: Through the immersive experience named ‘Eat With Art’, a collaboration with Juan Alfaro (an international curator of contemporary art), the chef invites us to explore a dialogue between contemporary art and gastronomy (with nods to Antoni Tàpies, Daniel Canogar, Donna Huanca, and others).
