COB stands for Cooking Outside the Box – a fitting description for the gastronomic philosophy driving this restaurant. Situated in the upper part of Portorož, it enjoys a magnificent view over the Bay of Piran, in a setting that unites modern, minimalist design with the warmth of a century-old wood-burning stove. At the helm of the kitchen is chef Filip Matjaž, supported by his brother Patrik, who coordinates a service that is both cordial and professional. The tasting menu conceived for 2026 takes Travel as its theme: the chef draws inspiration from countries across the world, reinterpreting their flavours and traditions through creative recipes crafted from excellent local ingredients. The experience is punctuated by stamps applied to a passport presented to each guest on arrival, in an original and engaging culinary narrative. Mexico, for example, is evoked by a taco filled with artichoke and crispy corn, whilst the guest personally assembles a tortilla stuffed with tuna tartare, sun-dried tomatoes, an onion crisp and a delicate spicy sauce. The result is a playful and surprising gastronomic journey, reflecting this young chef’s creative personality and imagination.
