A restaurant with an industrial vibe in the heart of the city’s Chueca district, featuring an open-view kitchen impressively and enthusiastically run by Juan D'Onofrio, a young Argentinian-born chef who is very happy with his life in Madrid.The aim of the contemporary cuisine here is to showcase the full nuances of the Mediterranean, to which the chef adds interesting Argentinian influences, with a strong focus on fire and the grill (all dishes pass over the coals or are smoked), and the use of aged fish and meat in which every flavour is emphasised. The à la carte, with the option of half portions to try many dishes, is complemented by a tasting menu. What caught our attention? The combination of prawns, banana and Palo Cortado sherry is a truly original starter, whilst the ‘Pichón en tres vuelcos’ (pigeon three ways) is served across three different dishes, showcasing the very best of the ingredients. There’s a small, more intimate annexe called La Trasera de Chispa Bistró!
