ASKANELI

About

Georgia in Miniature. This project is designed as a large country house and aims to introduce guests to the gastronomic, oenological, and cultural richness of this country.

"One of the most important Georgian traditions is genuine, heartfelt hospitality. Georgians believe that every guest is a gift from God, and the time spent with a guest is invaluable. Inspired by this idea, we created a project in the style of a large Georgian country house, where all the staff are hosts, and the visitors are guests in the broadest and most sincere sense of the word," says Artem Gudchenko, the project's ideator. The restaurant features a separate hall for private events accommodating 25 people, a stage for live performances, and four large summer terraces. Inside, there is also a gourmet shop where you can purchase a selection of wines and spirits from ASKANELI, as well as traditional Georgian homemade specialties such as jams, spices, sauces, churchkhela, and much more. The foundation of this new project is ASKANELI wines, cognacs, chacha, and fruit distillates, accompanied by traditional Georgian cuisine. Drawing on Georgian culinary traditions, the team adds new flavor nuances. Maxim Galishnikov, the brand chef, is responsible for bringing the menu to life – he is a recognized expert in Georgian cuisine. Maxim has traveled extensively throughout Georgia, visiting families and learning about the customs of different regions, absorbing the diverse gastronomic characteristics of national dishes. Previously, Maxim worked as the head chef of the "SUPRA" chain of Georgian restaurants in Vladivostok. To recreate the authentic atmosphere, the interior features details brought from Georgia, including carpets, ceramics, antique tableware and furniture, and national costumes. The clothing for the staff was designed in collaboration with the company Samoseli Pirveli, which specializes in tailoring national costumes. The specialists at Samoseli Pirveli deeply study traditional materials, colors, and patterns, researching preserved samples in ethnographic museums. Handmade tableware with artistic designs was created in the White Studio ceramics workshop in Tbilisi. The team has strived to embody the essence of Georgia in this project, creating a kind of "concentrate" of Georgian culture, to convey to guests the impressions and emotions that can be experienced on a real trip to Georgia and a close acquaintance with its traditions.
