In the premises that once housed the family pastry shop, the Fossaceca brothers have breathed new life into a space now consecrated to signature gastronomy. The interior, minimal and contemporary in its neutral tones, seems deliberately to step aside and allow the cooking of Nicola to take centre stage, while the outdoor area – bright, intimate, and with the unhurried atmosphere of a small piazza – offers a livelier and more airy prospect. The modern and technically rigorous cooking pays measured homage to the ingredients of the local area, beginning with the finest catch the Adriatic has to offer, handled with a light touch and great precision. The leavened products are excellent, the fruit of selected Abruzzese flours and careful work with fermentation, as is the refined coffee list, which brings the meal to a close with a degree of attentiveness that is not to be taken for granted. The glass-fronted wine cabinet in the dining room is a delight in itself: a natural invitation to yield to the temptation of a fine bottle, or to let oneself be guided by Antonio, a most accomplished and passionate host.
