About
He was born in Moscow and received professional education at Moscow State University – Technical University (management technologies; food technology). He worked in restaurants at five-star hotels, including Ararat Park Hyatt and Four Seasons (with David Emmerle). He completed internships in France at Le Jardin Des Sens (three Michelin stars), La Villa Mauresque, and in Spain at La cabra Restaurante, BiBo Dani Garcia, Gaytán restaurante, and Mamá Framboise. His resume also includes experience as a sous chef at 15 Kitchen+bar and the TsDL restaurant. In 2018, Vadim Malkov became the brand chef of the [KU:] izakaya bars. He has repeatedly traveled to Japan for internships and organized tours for Japanese chefs at his establishments. Many remember his collaboration with Ivan Orkin (Ivan Ramen) at the Martini gastronomic festival in 2019. He is also an active drummer in a punk band.
