About
We focus on regional and seasonal produce, sourcing much of it via short supply chains as well as from our own garden, the famous Erlangen fish, and vegetables from Germany's Knoblauchsland. Everything is utilised to the fullest extent possible, partly fermented or pickled. Food waste is consistently repurposed and reduced; for example, it is used to make kombucha.
