About
With a few exceptions including salt, our produce is from the Scandinavian area, most of it from Finland. We aim to meet all our producers regularly and we invite them to participate in our internal meetings to share their knowledge. Although our two menus are plant-based, one fully vegan, we work with meat and poultry farms that are open for us to visit at all times and we use reduced meat broths, koji bacteria and dried meat to increase flavour without adding any extra protein.
