About
Santiago Torrijos, a French citizen, began his professional career at Joel Robuchon (from April 1994 to September 1995), where he started as a young, aspiring chef. He then worked at Bristol (1999-2000), Plaza Athenee (2003-2005), and later at Guy Martin (2018-2019). Having built a successful career and gained extensive professional experience, he left the Guy Martin project to open his own restaurant in Paris, Atelier Rodier (2012). This restaurant operated for 6 years and was nominated for a Michelin star. The project was well-received by both the public and critics. With Atelier Rodier's pop-up events, Torrijos traveled to various countries around the world, including Moscow.
Santiago creates exquisite dishes and works with diverse cuisines from around the world. The chef is proud of his Colombian heritage and often incorporates the flavors of his country into his dishes, using unique spices that he skillfully combines with French gastronomy.
