About
Born in Moscow, he graduated from the Moscow State Institute of International Relations. He has always been drawn to the culinary world, possibly inheriting this passion from his grandfather, who was a chef. Gradually, the desire to create something extraordinary evolved into a desire to understand how it all works. And with his first job, he realized that this would become his life's work. As a chef, he participated in the opening and development of a chain of culinary establishments (Coolek), and he also developed the delivery service for burgers and sushi (Papas Burgers). Working at "MeatPuppets" was a significant stage in his career, providing him with a wealth of experience and impressions. There is much that could be said about that time, but the best part of it was undoubtedly the people he worked with. And it was with them that he started a new project, "Alko-Buffet Shashlychnaya." This was a completely new format for him, which made it all the more interesting. The Soviet-style "рюмочная" (small bar) format has been adapted to modern trends, incorporating farm-fresh, local ingredients and a focus on detail. The goal is to reveal the original flavor of the products and showcase their inherent qualities, so that the expression "delicious and simple" takes on new meaning. The simplicity of the presentation in these conditions often requires delicate and complex preparation. This further fuels his interest in exploring molecular gastronomy and fermentation, driven by that childhood desire to understand how everything works.
