In the capital city, he initially worked as a prep cook and grilled kebabs at the "Seasons. Autumn" cafe, before moving to the Novotel St. Petersburg Centre 4* hotel as a cook. He was invited there by the French chef, Fabrice Pantera, who believed in Ruslan's abilities and later shared his culinary knowledge with him. He then worked as a sous chef at the Borgato restaurant under the guidance of Antonio Barrato. Afterwards, Ruslan headed the kitchens of Marani in GUM department store, Satrapezo, and the Golden Palace banquet complex. During this period, he was recognized as the "Best Ambitious Chef" by the international The Best Business Awards-2020. Ruslan Bui has been the head chef at the "Che? Harsho!" restaurant, part of the WRF alliance, since its opening in June 2022.

Ruslan Bui was born on March 29, 1989, in the city of Rubtsovsk, Altai Krai. He graduated from a sports school for promising athletes. After serving in the army, he started working as a kitchen assistant in a restaurant in Rubtsovsk. He enjoyed cooking and quickly advanced to the position of cook, after which he decided to continue his career in Moscow. His interests include extreme sports, such as ski jumping, and the cuisines of different countries. In search of new and interesting flavors, he has traveled extensively throughout Turkey, Italy (Positano and Florence – a particular culinary passion), France, and Spain. Education: Moscow State University of Service, Hotel and Restaurant Management. Marital status: Married.
