About

Roman Nikonorov is an officially recognized Don Cossack, born in the village of Knyazhikh, Tver region, and raised in Rostov-on-Don. It was there, as a child, by his grandmother's stove, that his love for real food – slow-cooked, fragrant, and honest – was born. Since 2012, he has traveled extensively, exploring cuisines from Japan to Italy, but he always returns to his roots, to local ingredients, traditions, and the element of fire. Fire has always been Roman's main source of inspiration – a living, hot element that demands respect. Roman has worked in restaurants in Novocherkassk and Sochi, serving high-ranking officials, and has progressed from a Japanese chef to a head chef. From 2022 to 2026, he held the position of head chef at the restaurant "Magellan." Roman studied at the International Culinary Arts and Restaurant Management School SVCh, taking courses in "Gifts of the Sea" and "Cuisine of the Russian North" with Chef Andrey Anikeev, and also completed an internship at the modern French restaurant "Frantsuza Bistrot" under Ivan Frolukhin. Today, Roman's signature cuisine is a dialogue between traditions. At Lore's, he will continue to develop the bistro's main concept: Russian generosity with a French flair.
