About
Oleg Shyn has been working with Japanese cuisine since 1997. In the early 2000s, there was a boom in Japanese restaurants in Russia, but it was difficult to find qualified chefs. Shyn actively developed in this area and, at the age of 23, he became the head chef for the first time at a high-end Japanese restaurant in Samara. He has worked at well-known restaurants in Moscow, including Buba by Sumosan, CutFish, and Tokyo. He also won the Russian stage of the Nespresso Gourmet Weeks competition. At the COBA restaurant, Oleg is developing a new, trendy concept: American-Japanese hand rolls. The key here is the purity of the product's flavor and simple combinations. Each ingredient in the dish is clear and distinguishable.
