Nikita Fedosov's passion for gastronomy began to develop in his childhood. In his family, it was a tradition to cook together, especially for special occasions. Gradually, this process became increasingly captivating for Nikita, and he began to experiment, watching cooking shows on television. The more he learned, the more he wanted to create his own dishes. Sometimes it was challenging: he didn't always have the necessary ingredients, but he persevered, finding substitutes and creating his first culinary masterpieces. As he grew older, Fedosov realized that he wanted to continue developing in this direction. However, instead of pursuing traditional education, he chose his own path: he studied gastronomy independently, took various professional development courses, and learned from renowned chefs, carefully remembering everything they advised and suggested. In this way, he gradually mastered different cuisines around the world and developed his own unique culinary style, combining Asian flavors, European techniques, and local Russian ingredients. The basis for any menu changes by Nikita Fedosov is the opinion of the guests. The chef gathers feedback from customers about the dishes and their culinary preferences, keeps up with trends in international cuisine, and watches various cooking competitions, which helps him better understand the needs of society. He then begins to brainstorm ideas, often late at night. The recent update to the "Wine Bazaar" menu on Kuznetsky Street was prompted by a desire for something new and different. Among the chef's personal favorites on the menu are "Zuppa di Pesce" soup, spaghetti nerri with tuna tartare and bisque sauce, a salad with smoked beetroot, Parmesan cheese, and chevre, and other dishes. Soon, the team, led by the chef, will present a new brunch menu.
