Mark Alexandrov was one of the driving forces behind the opening of the first Hitch restaurant on Moskovsky Prospekt. As a true meat expert, he recommends his signature dish to guests: "I believe everyone should try our carpaccio and tartare, especially the smoked marbled beef with Borodinsky bread cooked over charcoal. It's an explosion of flavors – that's what raw meat is all about! I'm a huge fan."
