About

Manuel is from the beautiful city of Reggio Calabria, in the southern region of Calabria, near Sicily. It was there, in his hometown, that he began his career at the age of 15, working in his uncle Giorgio Riggio's pizzeria. Giorgio Riggio is a two-time world champion among pizza chefs. Before coming to Russia, Manuel worked in London at a restaurant with one Michelin star.

Specifically for Aram Mnatsakanov's restaurants, Manuel developed a recipe for a signature pizza – super thin and crispy. Thanks to the perfect dough recipe, this pizza is not only loved by guests but also recognized by experts. In 2021, the chef's skills were recognized with a ranking in the Top 50 Best Pizzerias in Europe.

Working with dough is Manuel's main hobby and a great passion. He spends as much time as possible on this activity, knowing that there is always something to learn. In 2022, the pizzeria DA MANU opened in St. Petersburg – a new project by Aram Mnatsakanov, where Manuel is the main figure.

The chef loves tattoos and constantly gets new ones. For the opening of the DA MANU pizzeria, he had the pizzeria's logo tattooed on himself. He also has a tattoo of a bergamot, a symbol of Calabria, on a leaf of which are tattooed the geographical coordinates of his hometown.
