In Japanese culture, the word "shōnen-dō" can be translated as "the path through focus and sincerity." Maxim Kolomatsky's path is exactly that. This is not a story of career advancement, but the journey of a person who, through his cooking, creates an atmosphere of trust, respect, and genuine flavor – not something superficial, but truly authentic. Maxim has been in the culinary world since 2002. His early steps included an internship and working as a cook at "Planet Sushi," followed by a position in premium Japanese cuisine at BENIHANA, where he became a senior sushi chef. Later, he opened the first "Viet Café" restaurants, worked with Vietnamese chefs, and completed an internship in Vietnam. He experimented with various cuisines, styles, and concepts. Since then, for over 14 years, Maxim has returned to the kitchen. He was the head chef at "Zyu Cafe," then at "Apartment 44," and won a competition for the position of brand chef at "Rosinter." A trip to Tokyo to visit his mentor was a turning point for him: the kitchen once again became not just a job, but a practice of presence, a way of expression, and a form of dialogue. Today, Maxim is the head chef and partner at KIOMEY. He independently creates the entire menu, from daily specials to the MASSE OMAKASE tasting menus. He carefully considers the rhythm of service, the balance of dishes, the structure of flavors, and the overall impact – because he believes that gastronomy is not just about aesthetics, but about creating a space for quiet contemplation, attention, and care.

Maxim is originally from the Rostov region in Southern Russia. He is a lecturer at the StandFood Academy. He is married and has a son. Outside of the kitchen, he enjoys: - Playing the guitar - Nutrition science.
