About
Born in Bratsk, Siberia, Maxim moved to St. Petersburg in 2005, where he began his culinary journey from scratch. Maxim's path into the world of fine dining began in 2015 under the guidance of his father, an experienced chef, who shared his knowledge and skills with his son, teaching him the nuances of culinary techniques and recipes. This early inspiration became the foundation for his future success. The following years were a period of independent development. Maxim tirelessly studied new techniques, experimented with various cuisines from around the world, and honed his skills in several restaurants in St. Petersburg. His experience as a cook, and later as a sous chef, in a European restaurant allowed him to accumulate a wealth of knowledge and skills. A significant milestone in Maxim's career was his time managing the kitchen at the Edwards bar. Here, he proved himself to be a talented creator of street food dishes, as well as a master of culinary pairings – the art of combining dishes and drinks. Among his mentors, Maxim particularly highlights Evgeny Zorov, whose collaboration with him at the Whitley Neill gastrobar significantly enriched his professional experience. Today, Maxim Kharitonov holds the position of head chef at the Cale restaurant. He continues to strive for continuous improvement, constantly searching for new recipes and bringing his creative ideas to life. His culinary specialization is Russian and European cuisine, but he is not afraid to experiment, creating seasonal special menus inspired by the abundance of seasonal ingredients. Classic recipes, in his interpretation, acquire a new, modern style, thanks to the skillful use of various "twists." In addition, Maxim actively participates in optimizing the kitchen's operations, demonstrating not only culinary talent but also managerial skills. Maxim draws inspiration for his culinary masterpieces from the ingredients themselves, treating each one with care. He pours his heart and soul into every dish, and this is evident in every item he prepares. Furthermore, his love for his family is reflected in his cooking. Every dish is prepared with care, as if for the most beloved person. Family is at the center of his life, and cooking is his passion, talent, and calling.
