Kirill Shamkhalov became a head chef at a relatively young age, 24. His main motivation is the passion for combining something new and interesting, and for presenting everyday and familiar dishes in a new, original way. He gained experience working in restaurants serving Russian, German, and French cuisine. He has created menus for dozens of different projects, ranging from establishments that serve breakfast all day to more rustic American barbecue joints. However, each establishment has featured a unique touch, seasonal and local ingredients, and a new approach that the chef strives to implement: a zero-waste production system.
