As a small restaurant we are working to be part of a bigger picture. We challenge our producers and suppliers to be a part of it too, by demanding that their deliveries are smart and sustainable. We operate a set menu and aim to reduce waste by using all of the ingredient. In the dining room, our staff explain the origin of the produce and how it is grown and transformed, and we push to create the right atmosphere for the new generation of chefs and future restaurateurs.
