His professional foundation and understanding of gastronomy as an art were shaped through internships in legendary European restaurants, with a focus on Nordic and Basque cuisine: Amas (Denmark), Arzak (Spain), and Noma (Copenhagen).
Key milestones and signature projects: "Farewell, Arms" and a pizzeria with Brooklyn-style dough – bold initial projects that taught him uncompromising standards and reliance on his own intuition. "WhatElse?" – a restaurant that revolutionized the culinary scene in Tula. "Ten" – a landmark micro-restaurant (10 seats), which evolved into a nationwide project. Present day: Developing three independent concepts: the nomadic dinners "Without Walls," the gastro-social manifesto "Punk Delicious," and the Russian soup restaurant "Ba" (a reimagining of traditional cuisine in a dynamic ramen-shop format).
Born on April 1, 1991, in a village in the Tula region. His father and grandmothers laid the foundation for his personality and taste, instilling a genuine love for nature, fishing, and "real" food, which became the basis of his worldview. In his youth, he dreamed of acting, read extensively, but ultimately chose a pragmatic path as a scientist. Today, Igor is a researcher who translates cultural codes and human memory into the language of gastronomy. When he's not managing restaurant projects, he dedicates his time to his family, raising three children. He is currently working on a book titled "Ba: Science and Memory," where he combines his childhood memories, culinary experience, and scientific background.
