Igor Shurupov graduated from the Moscow Technological Institute, but instead of working in his field, he chose a career in the restaurant industry. He began his career in 1989 as a waiter at the "Intourist" hotel. In 1991, he worked as a cook at the "Pirovano" hotel in Italy. From 1992 to 2002, he worked as a manager at French restaurants in Moscow, including "Le Chalet," "Actor," and "Ulei." In 2002, he opened the Italian restaurant "Accenti" in Moscow, serving as the head chef and co-owner. In 2010, "Accenti" received the "Best Restaurant of the Year" award at the Moscow Gastronomic Festival. Since 2008, he has participated in major international gastronomic congresses, such as Madrid Fusión and San Sebastián Gastronomika, as one of the leading chefs in the world. In 2010, he received a diploma from the Italian Ambassador to Russia, Vittorio Surdo, for his significant contribution to the development of Italian gastronomic culture in Moscow. In 2011 and 2012, the "Accenti" restaurant team, led by Igor Shurupov, toured and performed at restaurants in Monte Carlo. In June 2013, Igor Shurupov presented the concept of the world's first Russian pizza. The main difference from the Italian version was the dough, which the chef made using flour from a specific type of grain. The toppings were in the style of familiar flavor combinations: pizza with beef tongue, pickled cucumbers, and horseradish; and pizza with scallops, dill, and oyster mushrooms. Igor experiments with different flavors and combinations in the kitchen, but he always finds the perfect balance. He enjoys working with seasonal ingredients and prioritizes the quality of the ingredients and their flavor combinations. He presents complex dishes simply, so that the guest's attention is focused on the taste. He finds new ideas and inspiration through travel in Europe, as well as through playing golf.
