In the world of haute pastry, Igor Melnikov's name is synonymous not only with chocolate, but also with a rare ability to combine craftsmanship, aesthetics, and emotional appeal. Over nearly 20 years in the profession, he has developed his own distinctive style – intelligent, technically precise, and visually impeccable.
Today, Igor Melnikov is the Executive Pastry Chef at the Four Seasons Hotel Moscow, a coach for the WorldSkills Russia team, a prize-winner in international competitions, and one of the most renowned Russian masters of chocolate sculpture. His works have been repeatedly recognized at the World Chocolate Masters, and the international magazine "So Good" – one of the leading publications in the world of haute pastry – dedicated a special article to him, highlighting Melnikov's unique approach to modern desserts and his work with chocolate.
His journey into the profession began long before his first awards and major projects. As a child, Igor spent a lot of time in the kitchen with his mother and grandmothers, and he made his first dessert – a chocolate "sausage" – when he was just seven years old. Later, there were years of independent practice, working in restaurants in Vladivostok and Kamchatka, studying techniques, internships, and exchanging experiences with European chefs.
Over time, chocolate became his primary professional language. Architecture, graffiti, urban textures, and natural forms – the source of inspiration for Melnikov can be found anywhere. Each piece begins with a sketch and precise calculations: in his approach, artistic thinking always goes hand in hand with engineering logic.
At the Four Seasons Hotel Moscow, the pastry department, led by Melnikov, has long become an independent culinary attraction. The Silk Lounge display case is considered one of the largest and most impressive among luxury hotels in Moscow: it features approximately 70 different desserts every day, many of which are handmade and updated several times a day.
The new collection of display desserts, developed by Igor Melnikov, continues his favorite theme – a modern reinterpretation of classics. Éclairs with vanilla, chocolate, cappuccino, pistachio, and honey cake flavors, chocolate "nuts" with condensed milk, pecans, and almond praline, macarons with delicate combinations of berries, coffee, and citrus, handmade candies, and signature cupcakes – all are united by attention to detail, purity of flavor, and the quality of ingredients.
A special place in the collection is still held by the signature "Medovik" (honey cake) – one of the culinary symbols of Silk Lounge. Melnikov manages to preserve that familiar emotional flavor from childhood in it, while also giving the dessert a modern form and visual lightness.
Despite his love for complex techniques and impressive presentation, Igor Melnikov remains an advocate for honest flavors and a professional approach to the product. In his opinion, a modern pastry chef is not only someone who knows how to make desserts, but also an artist, a technologist, and a researcher who is constantly seeking new forms of culinary expression.
