About
As we focus heavily on plants, we follow the seven seasons of the gardening calendar! Kitchen "scraps" are processed, pickled, cooked down, dehydrated, fermented, turned into drinks, stocks and marinades, and we make everything from vinegar to soy sauces ourselves. Fish are slaughtered by the ikejime method and game comes exclusively from regional hunts.
