Yegor Kalinin is a chef and culinary concept developer with over 10 years of experience in the gastronomy industry. Throughout his career, he has successfully implemented numerous projects in Russia and abroad, including positions as head chef at restaurants such as Eva Beach House (Dubai), Amber, Tokyo, and projects like Cutfish, LEPS.ASIA, and Lúwo. Yegor's professional path is characterized by continuous development and a стремление to excellence. He has participated in numerous culinary events alongside chefs from prestigious lists like The World's 50 Best Restaurants, S.Pellegrino Young Chef, and the MICHELIN Guide. He shares his experience and knowledge as a guest speaker and instructor at leading culinary academies in Russia, including Novikov School and Stanfood Academy. In 2023, while heading the Eva Beach House restaurant in Dubai, Yegor completely reimagined the restaurant's culinary concept and established efficient relationships with international suppliers. He managed to significantly reduce food costs, from 32% to 23%. His work in Moscow restaurants allowed him to hone his management skills. At Amber and Tokyo, he was involved in developing set menus (Asian cuisine, local products), managing restaurants with open kitchens and live cooking stations. One of his key achievements was transforming the technically outdated kitchen of Tokyo into a modern space operating under an Asian concept. The peak of his management growth came during his time at the Cutfish restaurant chain, where Yegor progressed from sous chef to brand chef. He was involved in launching a new restaurant in the chain, from selecting equipment and recruiting staff to setting up technological processes. During the COVID-19 pandemic, he successfully reorganized the kitchen's operations, leading to increased sales through efficient delivery and takeout services. Working at the LEPS.ASIA restaurant provided Yegor with the opportunity to realize his potential in creating an authentic Asian menu. As head chef, he developed a culinary concept that combined the pure flavors of Japan with vibrant accents from Thailand, China, and Vietnam. The menu placed particular emphasis on the raw bar and innovative ingredient combinations, allowing guests to experience a modern interpretation of beloved Asian classics. A new stage in Yegor's career came with his position as head chef at the Moscow restaurant Lúwo. Here, he acted as a culinary concept developer, reimagining Mediterranean cuisine through the lens of Moscow traditions. His vision was a modern Moscow Greece, where simplicity, quality, and the principle of "one dish, one idea" are the main features of the menu. Drawing on the history of the ancient Luvian people, who influenced the culture of the Mediterranean, Yegor created a menu where Greek traditions intersect with the influences of the East and Asia Minor. Yegor's specialization includes modern Asian and Mediterranean cuisines, a systematic approach to management, and the development of restaurant concepts. He possesses strong leadership qualities, negotiation skills, and the ability to find the best products at optimal prices. Yegor not only manages processes in the kitchen but also effectively interacts with the audience, trains young chefs, and successfully collects and processes feedback for continuous service improvement.
