About
Dmitry was born in Moscow. He began his culinary journey at the restaurant LavkaLavka, where he worked as a cook, and then moved to the intimate bar Shortlist Books and Spirits. There, he had the opportunity to organize a brunch with Ecuadorians, where they prepared traditional Ecuadorian cuisine, including empanadas. At this establishment, Dmitry also formed a close-knit team and made good friends, a period he remembers with great fondness.
A new chapter in his career began at the bar Masters & Margaritas, where he became a sous chef for the first time. It was there that he was noticed by more established establishments. He first became a head chef at the popular bistro-bar Lado, where he had the opportunity to work with the renowned chef Marco Ferreira from Sangre Fresca. Together, they launched a seasonal Mexican menu featuring tacos, a Dutch baby pancake, and an unusual fig cake. Before becoming the head chef at the local bistro Colibri on Shabolovka, Dmitry successfully worked on projects for the Bazar Family holding company.
