The chef and owner of the Zazazu wine shop and tapas bar in St. Petersburg has, at various times, been involved in the launch of projects such as "Schastye," Barbaresco, 22.13, Soholounge, Americano, Barrybar, and has worked with renowned chefs such as Carmelo Carnavalle, Bruno Schingallani, Jenna Kistner, Daniel Burns, Laurent Moreno, Brad Farmerie, Patrick Canal, Bruno Doucet, and Julien Duboue.
Today, in addition to his own project, Dmitry has developed an educational program for chefs aimed at improving their professional skills and the quality of their work (the program was created in collaboration with the Higher School of Biotechnology and Food Technology, part of the St. Petersburg Polytechnic University), as well as a training and lecture series titled "The Human Microbiome and the World of Bacteria Around Us."
