About

Denis received his professional education at the St. Petersburg Maritime Technical College named after Admiral D.N. Senavin, where he graduated with a diploma in shipboard cooking. After that, he worked in various restaurants in St. Petersburg, gaining experience, and then moved to the Hotel Kempinski, where he worked as a chef for over a year, alongside Didie Rebel. However, his thirst for adventure soon took over, and Denis Prohorov joined the Celebrity Cruises company as a shipboard chef on the Eclipse. A significant step in his culinary career came in 2013 when he joined the Four Seasons Lion Palace St. Petersburg hotel, where he worked in all departments of the restaurant service for the next seven years. From 2017 to 2020, he held the position of head sous chef at the hotel. In 2020, Denis joined the team of the Chang restaurant, specializing in Asian cuisine, where he became the head chef. This impressive debut was recognized in St. Petersburg's culinary circles: Denis Prohorov was named Chef of the Year 2020 by the Time Out magazine. According to the chef, his profession combines the roles of an artist, an alchemist, and a magician: it requires the ability to surprise, the art of revealing and combining flavors, and an impressive presentation. Among the chef's favorite dishes is Tom Yum soup, which has been a hit on the restaurant's menu since its opening. Denis Prohorov's version of Tom Yum is a special and delicate creation, featuring squid, shrimp, vongole, lemongrass, kaffir lime leaves, shrimp paste, palm sugar, and a rich, consommé-like broth. "Every day, I am inspired by the people I work with, old cookbooks, memories from my travels, and legendary chefs I meet. I never stop learning and constantly improve my skills. I enjoy using the best local ingredients, combining traditional recipes with modern techniques. In my kitchen, I strive to show guests an authentic taste through new textures and combinations," says Denis Prohorov. Denis travels extensively and continuously improves his skills through internships in leading foreign restaurants. He has completed training and internships at Michelin-starred restaurants such as Azurmendi*** (Bilbao, Spain), Caprice**, Four Seasons Hotel Hong Kong (China), Lung King Heen***, Four Seasons Hotel Hong Kong (China), Il Pagliaccio** (Rome, Italy), and La Ambrosie*** (Paris, France). Denis Prohorov is a guest chef on the TV show "The Right Kitchen" (Channel 78, St. Petersburg) and is a member of the teaching staff at the SVCH School.

Denis Prohorov was born on December 4, 1987, in Leningrad. Denis's interest in gastronomy dates back to his childhood: his grandmother worked in the culinary field, and his mother was very interested in gastronomy and loved to experiment with different dishes. From a young age, Denis was very interested in all the cooking shows he watched on television.
