Luka Balac Most of our produce is organic, biodynamic, regenerative or wild. With the exception of salt, coffee, tea, wine, seaweed and rapeseed oil, our ingredients come from within a 300 km radius. Vegetables and grains are the mainstay of our dishes and where we do use meat, we favour poultry or game, or ex-dairy cow and cattle from grazing or biodynamic farming, and we purchase the whole animal, making valuable use of every part. Our fish is sourced from Finnish waters using responsible methods.
