Regional produce takes centre stage here. While our menu is defined by our pasture-raised oxen, every other ingredient is regionally sourced, too – even the caviar, which comes from a sturgeon farm in the Rhön mountains. We send our leftover bread to a local stable, vegetable/salad trimmings are shared with our team's pets. Detailed profiles of our supplier partners are featured in a book.
