"I've been in this profession for 14 years. I moved from Belarus to Moscow, enrolled in the Ramen Polytechnic College, and got an internship at the Conquistador restaurant, and that's where it all began. From the very first day, I realized that I wanted to be that head chef in the kitchen, the one who feeds everyone and surprises them. But to be honest, I was a terrible employee and cook because I didn't follow the standard recipes and always wanted to change things, break the rules, and do things my own way, adding my own perspective. This led to constant conflicts. But I felt that I could do something different, not just what was expected, but what I wanted – and I did, even if it meant breaking the rules.
I have some experience as a bartender, but I realized that the role of a head chef is more appealing and promising for me. Of course, there are times when I feel burnt out and want to quit, but after a few days, I already miss the kitchen."
