Yves Ollech We harvest our own vegetables, lettuces and herbs from April to November. During the winter months, we supplement our produce with root vegetables stored in the ground. Our daily work in the fields, allows us to incorporate into our cuisine many parts of the plants that would otherwise only serve as compost or fertiliser.
