Tobias Bätz Franconia is home to outstanding producers and farmers – a perfect fit with what we do. To transform their exceptional ingredients into a menu unlike any other, we have created our Future Lab ANIMA. There, we elevate produce from over 80 regional suppliers – including a tropical greenhouse, a Longhorn ranch and many small artisanal producers – using ancient techniques such as fermenting and curing. Our menus at AURA are built entirely around these very food items.
