About
Abdessattar Zitouni's career in Moscow began at the "Aerostar" hotel restaurant, where he worked for the two years stipulated in his contract. He gave his former colleagues the right to proudly call themselves "Zitouni's students." After 10 years of working in prestigious restaurants in Canada, the renowned chef received a second invitation from Moscow restaurateurs. This time, it was about realizing a high-end restaurant project called La Mare'e. Since 2021, Abdessattar Zitouni has been the head chef at the Cafe Imperial, a restaurant serving авторская (author's) cuisine, located in the new five-star Moscow Marriott Imperial Plaza hotel. The restaurant's menu features European cuisine with a Mediterranean influence. Abdessattar Zitouni believes that the secret to preparing a delicious dish lies in simplicity and honesty, which allows the natural flavors and aromas of fresh ingredients to shine through.
Originally from Tunisia, Zitouni has been a chef for over forty years. He speaks seven languages and has managed kitchens in many countries around the world, including a five-star hotel in Venezuela, the famous "Hilton" and "Holiday Inn" chains, and the "Four Seasons" in Canada. He also prepared a wedding banquet for Celine Dion. However, Abdessattar Zitouni chose the profession of chef by chance. After spending a year after high school searching for a fulfilling career, he saw an advertisement for enrollment in a hotel management college. It turned out that there were only vacancies for the culinary program. However, within a year, Abdessattar, who specialized in baking, proved himself so well that he began to be invited to cater banquets. After five years of training, Zitouni spent three years working as an apprentice in Frankfurt, followed by a career as a chef in his native Tunisia, and then throughout Europe and America. He was one of the first foreign chefs to be invited to work in Moscow in the mid-1990s.
