Chef Tommy and maître d' Vera have given their charming premises in the centre of Utrecht a stylish makeover. Soft mood lighting contributes to an intimate feel, understated design has a soothing effect and a large mural enlivens the space. Vera runs the dining room with effortless grace; Tommy presents a passionate tribute to his terroir through his dishes. Vegetables, sourced as locally as possible, play a central role (a vegetarian set menu is also available). This is a chef who cooks with great precision, shows a deft touch in applying fresh acidic notes and skilfully plays with temperatures and textures. Creativity, craftsmanship and powerful sauces set his cuisine apart. Take his signature dish of langoustine served on a bed of cashew and chicken skin cream, with samphire, violet flowers, and a dazzling bisque and tandoori sauce. Outstanding! The extensive wine list is equally compelling, and places particular emphasis on Dutch and Belgian labels.
