A culinary experience in every sense! From the moment you enter you are guided through a surprising sequence of flavours and sensations that include stunning appetisers in the garden and the Living Lab, a collaborative space in which the restaurant grows and revives native species that are almost extinct (’Ciezana’ aubergine, ‘Flor de Baladre’ tomato, cowpea, etc.). You then continue to the spectacular modern dining room with its surprising setting in a huge thatched hut. Here, you savour main dishes, with fantastic dishes such as Panaché of vegetables and langoustines (a wonderful tribute to the garden, with up to 18 types of vegetables cooked independently) or their powerful Red mullet with garlic and seafood.Chef Pablo González’s creative cuisine is showcased on two tasting menus (Olivo and Experience) that constantly reference regional recipes and stand out for their presentation. Dessert and coffee can be enjoyed on the terrace overlooking the lake.
