This "smart comfort food" project focuses on vegetables, prepared simply but cleverly in the distinctive "Glen Ballis" style.

Glen Ballis has brought together all his knowledge about the nuances of flavor in each vegetable, which we are accustomed to seeing in supporting roles. He emphasizes seasonality and expresses all of this in the menu of Restaurant #13. Striving to showcase the ingredients, Glen chose open fire as the primary cooking method, as it enhances the aroma and flavor, and infuses the vegetables with warmth. From there, the process involves playing with textures and combinations: vegetables are fermented and chilled, combined into compositions, and complemented with signature sauces. As Glen Ballis himself says, the core concept here is "smart comfort food" – food that is original but accessible to everyone. The interior design continues this theme, instantly transporting guests from the heart of Moscow to a different world. The intimate space features natural motifs, massive wooden tables, a warm wooden floor, and rounded, almost ethereal shapes that invite touch. To avoid taking the "rustic kitchen" feeling too far, subtle modern elements are incorporated: ample lighting and contemporary art pieces. The centerpiece of the multi-level space is an open kitchen island in the center, resembling a theatrical stage where the chef creates his art. Overall, this creates a sense of tranquility and a unique feeling of serenity, unusual for a metropolis: the rich aroma of roasted vegetables, the quiet bustle of the open kitchen, the soft light, and the warmth of the wooden table. The head chef is Mikhail Geraschenko. The head pastry chef is Yuri Volkov. The project was developed by architect Evgenia Uzhegova (Living Now Studio). The restaurant has 80 seats.
