The first project of the White Rabbit Family restaurant group in Voronezh. This restaurant, styled as a Belgian brasserie, proves that the world of beer is just as deep and complex as the world of wine.

The "Belgium" concept is built around the cultural heritage of Belgium and the country's contribution to global beer culture. The team's mission is to demonstrate that beer, like wine, offers a wide range of flavor nuances. However, at "Belgium," the dishes have been reimagined to complement the extensive beer selection. The chef prepares classic Belgian dishes, such as waffles and mussels, in his own unique way. The rest of the menu features innovative cuisine, where he reinterprets the taste, color, and aroma of each ingredient, transforming Parmesan into a light mousse, flax into chips, and coconut yogurt into sea foam. The shrimp salad is dressed with a blue spirulina sauce, the pumpkin soup includes a coconut espuma, and dessert features a sphere of Belgian pink chocolate that melts from the hot sauce. The restaurant features a specially designed and built aging system called Solera. This is a living technology that creates a unique and unparalleled product. Homemade infusions and cocktails are placed in Slavonian oak barrels for a period of 20 days. The aging process gives the drink a distinctive character, imparting noble notes of oak and creating a more complete flavor profile. These drinks are called "Reserva." For example, you should try the Negroni or the restaurant's own Aperol infusion. The bar menu features a wide selection of Belgian beers (over 130), as well as a special line of Belgian-style beers from the partner brewery, Tarkos (Voronezh). You'll also find homemade infusions, signature and classic cocktails, a well-balanced wine list, and healthy lemonades. The restaurant is located on the central square of Voronezh, and the interior design was developed by the St. Petersburg-based team, Paum family. The Belgian style is reflected in the use of natural materials and textures, earthy colors, and a tactile feel. However, the space is a modern interpretation of traditional brasserie interiors. The design is thoughtful, with great attention to detail and nuance, creating a relaxed and inviting atmosphere. Warmth, comfort, and coziness are combined with the ruggedness of the materials and textures – a play of contrasts. The drawings and panels on the walls evoke Belgian graffiti and street art culture. "Belgium" has two focal points: the bar, which serves as a central gathering place, is monumental with a massive countertop and a three-meter beer column, and the Solera system, an impressive arrangement of oak barrels of various sizes used for aging the signature drinks.
