Displaying an elegant avant-garde aesthetic, this is a truly unique space... on the top floor of a nineteenth-century building!Here, where there is also a spectacular terrace, you can enjoy a culinary experience in the form of four menus, all with wine pairing options: Esencia laborables (available Thursday and Friday at lunchtime), Esencia (evenings and Saturdays, with the possibility of adding further dishes), the so-called Madrid, Madrid, Madrid and, finally, the so-called Gran Madrid. Chef Paco Roncero, who has an unwavering enthusiasm for olive oil, demonstrates his full creativity in his starters (his Filipino of foie gras with white chocolate is particularly noteworthy), and focuses his menu on more traditional cuisine, paying homage to the Spanish capital's bars (we loved his version of the calamari sandwich). The sweet finish, with a series of chocolates dedicated to the different neighbourhoods of Madrid, is a fun and surprising twist!
