Located on one of the town’s busiest streets, just a stone’s throw from the popular Playa de Muro, Fusion19 provides a wonderful opportunity to enjoy a true fine-dining experience. In the modern dining room (with its glass-fronted wine cellar featuring over 400 labels), open-view kitchen and a space in the style of a winter garden, discover fusion cuisine which is based around “ingredients, memories and influences”. In the kitchen, the young duo comprising chefs Aleix Serra and Marc Marsol conjures up two tasting menus (Plenitud and Esencia) on which they are keen to place the spotlight on the essence of Mallorca’s cuisine, which they base around ingredients from the island (they also have their own vegetable garden on the outskirts of nearby Alcudia) while leaving the door open to the occasional international influence. Standout options include the dishes entitled Albufera (with duck and foie gras) and the Tambor ice-cream dish, made according to traditional techniques.
